Lately, I've been having to use the following command every few days:
/usr/local/centovacast/sbin/fixperms
what would be some reasons that our server (actually all our servers) would need to have the perms fixed?
The issues encountered range from unable to download logs, to uploading errors (both using FTP client and CentovaCast.
Would it hurt to create a cron to run the command once daily?
Thoughts?

No, running the fixperms utility script on a daily basis via cron, won't hurt or break anything.
As for why would you have to run this so often, I would suggest that the next time you have an issue, you actually look at the permissions of the related file to see what exactly has changed.
